Semolina Cucumber Cake
Ingredients
- 3 eggs
- 1 tsp oil
- 1/2 cup Mawana Select Caster Sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1½ cup grated cucumber
- 3 tbsp flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 cup semolina
Garnish
- Mawana Select Icing Sugar
- Mint leaves
Preparations
- In a mixing bowl beat eggs using the Usha Hand Mixer. Add oil, Mawana Select Caster Sugar and blend them together.
- Add vanilla extract, lemon juice, grated cucumber and mix well. Sieve flour, baking soda, baking powder into the mixture. Add semolina and fold.
- Transfer the contents into a cake tin lined with baking paper and bake using the Usha OTG at 180˚ for 30 minutes.
- Garnish with Mawana Select Icing Sugar and mint leaves.
